Ingredients
- 2 cans light coconut milk
- 1 jar green curry paste
- 1 1/2 tsp brown sugar
- 4 garlic cloves, minced
- 2.5 pounds chicken breast, cut into small chunks
- 1 red onion, cut in half and then sliced into thirds
- sliced mushrooms of choice, bok choy & jalapenos (as much as you want)
- 2 tbsp cornstarch
- a super giant squirt of Sriracha
Instructions
- In the bottom of the crockpot, whisk together the coconut milk, green curry paste, brown sugar, and garlic.
- Add in the chicken and onion.
- Cook for 3-4 hours (or as long as your crock pot needs).
- Whisk together the cornstarch and 2 tbsp water. Add to the crock pot and cook for another 30 minutes or until the curry thickens up.
